Description

A private members club established by Pip Hills in 1983. It has flagship members bars in Edinburgh, Glasgow and London, and partner venues across the world. Its regular outturn of single cask bottlings are renowned for their unique coded method of non-disclosure of their distilleries of origin. A Speyside malt distillery built by Seagram Distillers in 1975 and today it is part of the Pernod Ricard.

Nose
We imagined having a glass of a crisp white wine following a short, sharp spring shower in a daffodil field. To eat, we enjoyed bacon-wrapped asparagus and Mediterranean grilled stuffed peppers followed by kiwi, banana and lime fruit salad, as well as gooseberry fool. After reduction the aroma was that of a melon medley with slices of cantaloupe, honeydew and watermelon, cotton candy grapes and green apple crisps.
Palate
On the palate we had a cup of barley grass juice or a masala chai with dried ginger and mace.
Finish
The finish served up banana and raspberry ripple ice cream.
