Description

Distilled at the Highland Farm Estate called Arbikie using a mashbill of 60% winter rye, 15% winter wheat and 25% spring malted barley, all grown on the estate itself. The distilate was then matured in both new charred American oak casks & PX Sherry to five a rich flavour profile.

Nose
Fresh cloves, nutmeg, Christmas cake spices, thyme, earthy notes, creamy butterscotch, with hints of maple toffee, orange peel, toasted oak, sultana, and caramelised cereal. Also notes of rye bread, vanilla, butter, popcorn, and warming spices.
Palate
Bold rye spice with clove and cracked pepper, followed by maple syrup, orange marmalade, and a rounded wave of PX sweetness. Notes of honey on toast, cereal, brown sugar, almond, stewed apple, mace, ginger, cinnamon, allspice, anise, and black pepper. Underlying warm caramelized citrus fruit, wood sugars, and fudge.
Finish
Long, warming, and gently sticky with raisins, spiced syrup, cocoa, and lingering marmalade brightness. Sweet notes of perfume, banana, vanilla, lemon cake, and butterscotch, with a cleansing menthol-like sensation and a slightly bitter dark chocolate or cocoa note.
