- Nose
- Sweet, savoury, and earthy. Peppered beef jerky, pork crackling, dry earth, salty rocks, and smoked chilis. Rich sherry flavour with dried orange, apples, raisins, prunes, strawberry jam, star anise, cinnamon, vanilla, and pralines. Cumin, sundried tomatoes, smoked paprika, pumpernickel bread, camphor, dried herbs, and black olives.
- Palate
- Medium texture, fairly drying. Very savoury, earthy, nutty, and bacon-y up front. Roast butternut squash with brown sugar and molasses. Rich sherried notes of cassis, cherries, extra-dark chocolate, and baking spices. Fragrant charred oak, smoked spices, and savoury roast meats. Mineral notes, mixed stonefruit, and more paprika. Plums, gasoline, cigar smoke, oil, sweet grapes, chocolate, mild to medium wood, a faint smokey sulfur, and an odd red wine sweet/sour dynamic.
- Finish
- Earthy-sweet. Black cherries, orange oil, red wine, and brown bread. Tobacco ash, tide pools, mulch, sesame seeds, and punky wood. A hint of mustard. Salt, blueberries, cherry, wood, cherry Vicks cough drops, dusty suitcases, sulfur, molasses, and peat smoke.
