Description

Signatory was founded by Andrew Symington in 1988. After discovering single cask single malt whisky while managing Prestonfield House Hotel, Andrew bought his first cask, a Glenlivet 1968, and is now one of the largest independent bottlers in Scotland. Nose
Sweet and sherry-laden, with a tingle in the nose at full strength. Vanilla develops, becoming fruitier on the dried fruit side. With time, it calms down, revealing floral, sweet, and light aromas. With water, it becomes tame, almost fresh, with light coffee-chocolate notes and fresh cereal notes.
Palate
Sweet and quite dry initially, becoming drier and tannic, woody, with a hint of clove and espresso. The sherry is restrained at full strength. With water, it's softer but less intense, sweet and hardly drying, soft and mouth-filling.
Finish
At full strength, intense but quite dry. With water, soft, smooth, and mouth-filling, nutty with light floral-sweet notes, persistent with a slight sweetness.
