After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. This bottling is a beautifully lemon-y single malt Scotch whisky from Aultmore distillery, matured for 11 Years Old starting in 2014. It was aged in a bourbon hogshead and released by independent bottler Thompson Bros. Bottled at an ABV of 56.1% and without chill filtering or added colour.
