This Bainbridge Whiskey Forty Saloon Small Batch Bourbon is a Bottled in Bond and 100% organic expression from Bainbridge Organic Distillers in Washington. It is aged for 5 1/2 years in new No. 3 charred American oak barrels. The bourbon honors the spirit of pioneers who built the Pacific Northwest, named after the first legal saloon in Seattle, which opened in 1853. [back label] It features a mash bill of 60% heirloom corn, 25% old variety triticale (a rye-wheat hybrid), and 15% soft white wheat.
