Description

Signatory was founded by Andrew Symington in 1999. After discovering single cask single malt whisky while managing Prestonfield House Hotel, Andrew bought his first cask, a Glenlivet 1968, and is now one of the largest independent bottlers in Scotland. Apricots with honey join notes of waxed citrus before chocolate raisins and cakey spice arrive. Wet soil, stewed red berries, baking spices, fallen leaves, dates, stewed figs, allspice.
Palate
Silky layers of caramel and floral honey join rich, sherried oak, prunes, and dates. Cranberries, wet soil, cocoa powder, slightly vegetal, thyme, allspice, walnut, light balsamic reduction, figs.
Finish
Rich layers of biscuity malt, butterscotch, sultanas, and oaken spice. Medium length. Cocoa powder, fallen leaves, slightly tannic, cranberries, wet oak, toffee cake.
