Benrinnes 27 Year Old, Refill Hogshead Cask, 1997, Thompson Bros, 51.9%

After establishing one of the World's leading whisky bars in Dornoch, Phil and Simon Thompson - better known as the Thompson Brothers - decided to take it a step further and start making their own whisky and gin on the site at the Dornoch Castle Hotel. Born from successful crowdfunding and a worldwide love of whisky, Dornoch's first whisky distillery was formed. While waiting for the whisky to mature, Thompson Bros also became an acclaimed independent bottler. This 27 Year Old Benrinnes single malt, distilled in 1997 and bottled in 2025 at 51.9% ABV, was matured in a single refill hogshead. Only 170 bottles were produced.
