Nose
Burnt wood and salted caramel, with a whiff of sea air. Trademark Big Peat smoke and brine, liquorice, charcoal, lemon, white grapes, smoky bacon, caramelised sugar, cracked black pepper, and light cereal notes. Very sweet with banana, vanilla custard, crème brûlée, cream, and nutmeg.
Palate
Juicy stone fruit and more caramel. Big salty arrival followed by peat, liquorice, pepper, and oak. Sweet with overripe, mushed banana, vanilla, and pineapple. Intense and salty, very maritime, with chili heat. Creamy, malty with barley, wort, salted pretzels, and cereals. Subtle peat with soot and earth, fresh lemon and ginger, nori, roasted nuts, and sautéed mushrooms.
Finish
Ash, drying baking spice, and sea breeze. Lingers for a long time, spicy. More smoke, peat, medicinal notes, slightly bittering and metallic, fading fruits, black pepper, and spices. Fairly light with poached salmon, cream sauce, lemon, ginger, coconut, green tea, and honey sweetness.
