Nose
Beautiful nose, rich with vanilla custard and tonka bean. The contrast of dark fruits, including blackberries and cranberries, is striking. Rice pudding and nutmeg add to the complexity, with zero alcohol burn on the nose, which is excellent.
Palate
The full mouthfeel is complemented by a sweetness from sticky cooked fruits and a slight dryness from quality wood. A floral/herbal note appears on the sides of the tongue, and there is spice.
Finish
Long finish, but everything else lingers. The spice is much more integrated and subdued than many other Bimbers I've had.
