Nose
Incredibly rich and wonderfully nutty with roasted almonds, but also grilled pineapple, dried apricots, pickled cherries and port-stewed pears. There's a pinch of cinnamon also, accompanied by roasted malt. Seriously impressive.
Palate
This type of oily mouthfeel has become a Bimber trademark. Charred oak, a pinch of pepper and salt, but also walnuts, cherry marmalade, juicy plums and orange pith. Finally just a little gunpowder.
Finish
Lingering pepper, nutmeg and stewed fruits. Long.
