Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using traditional methods. This third batch release from their Oloroso Cask range is a vatting of first fill ex-bourbon casks finished in Spanish oloroso sherry. It offers a silky texture with a distinctive fruit-focussed character and layers of rich, sweet intensity.
