Description

Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment using traditional, small-batch production methods, floor-malted barley, long fermentation (7 days), and direct-fired copper stills for rich flavour. This particular release is a Bimber Private Cask #201929, a single malt London whisky distilled in 2019 and bottled in 2023 from a Virgin Blood Tub cask.

Nose
It's difficult to pin the nose down - at first there are lots of sweet fruits that remind me of a bourbon cask, but then lots of spice, Christmas pudding notes making you think of sherry - smells good.
Palate
A really thick mouthfeel with plenty of fruit, before an explosion of spice, some chocolate, big flavours keep coming.
Finish
The finish builds for ages before fading away - amazing to get so much flavour into such a young whisky.
