Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment. This release is the Santa's Edition for 2025, matured for an undisclosed period of time, initially in oak before spending a period of time finishing in a Pedro Ximenez sherry cask. There were just 338 bottles produced at a strength of 57.3% abv, free from chill filtration and artificial colouring.
