Proudly celebrating his family's roots in moonshine production - and even using the Polish word for moonshine, 'Bimber' - Dariusz Plazewski set up his London-based distillery in 2015 with Ewelina Chruszczyk after emigrating from Poland. Bimber is one of only a handful of working distilleries in London and of even fewer in the whisky-making industry. They pride themselves on a natural environment. This is the fourth and final release in Bimber's 'The Four Elements' series, exclusive to Master of Malt. Named 'Water', this single malt was drawn from a single bourbon cask (#518) and bottled at 52.1% ABV. The series explores Bimber's distinctive production processes, with 'Water' highlighting the impact of dilution with Thames water to unlock additional aromas and flavours. There are just 271 bottles available.
