Description

This single malt whisky is part of Bimber's 'The Spirit of the Underground' series, a collaboration with Transport for London celebrating the London Underground network. This particular release pays tribute to Wembley Park Station. It is a single cask bottling, matured in American oak with a secondary maturation in a Marsala cask, and bottled in April 2024. Bimber Distillery, founded in London in 2015, is known for its traditional production methods, using single-farm barley, seven-day fermentation in wooden washbacks, and direct-fire copper pot stills.

Nose
A fairly candy-esque first impression with nougat, orange zest, nectarines, soft floral notes, tamarind, date, apricots, and soft baking spices. Also vanilla milkshake, white chocolate, jaffa cakes, oak, cinnamon sticks, and a herb like oregano or tarragon.
Palate
Oily mouthfeel. Heavy on spices like cloves, nutmeg, and allspice, along with mixed peel, gentle earthiness, coffee grounds, and chocolate. Also spicy and sweet, then savoury with a heavy dose of oak, jaffa cakes, cherries, raspberry ripple ice cream, and some astringency.
Finish
Medium length. Burnt toast, lemon pith, tangerines. Drying, with nutmeg and more dried herbiness. Elegant and long-lasting.
