Description

The Bivrost Niflheim is the first single malt release from Aurora Spirit Distillery, the world's northernmost whisky producer, located far within the Arctic Circle near Lyngseidet, Norway. Established in 2013, the distillery is built within a disused NATO Cold War base, where the whisky matures in underground tunnels. This limited edition expression, bottled in 2020, is triple distilled using Nordic barley (Pilsener Malt from Viking Malt in Finland, including Planet and Popino varieties) and glacial meltwater from the Lyngen Alps. It is triple-matured, initially in 50-litre virgin oak casks, then transferred to 190-litre first-fill bourbon barrels, and finally finished in 250-litre ex-oloroso sherry casks. This uncolored and non-chillfiltered whisky was released as part of a series named after the nine worlds of Norse mythology, with a total outturn of 1,622 bottles.

Nose
Sweet and woody with notes of dried fruits (cherries, sultanas, raisins, figs), jammy fruits (blackberries, blueberries, saskatoon berries), sweet toasted nuts (peanuts, almonds, hazelnuts), caramelised wood-sugar, cocoa powder, cinnamon, white and black pepper, vanilla, honey, and a rich spiced malt note like toasted malt bread with nutella.
Palate
Thick texture, medium body. A balance of sweet and woody spice with hints of dried fruit. Notes of maple syrup, pungent purple berries, sweet orange, honey, clementines, plums, heavy sticky oak, brown sugar syrup, subtle herbal and tobacco notes, a tiny hint of smoke, ultra-reduced wine notes (almost port-like), vanilla, caramel, and lightly spiced malt. Some sources mention a slight alcohol prickle due to youth, and a taste of pilsener malt.
Finish
Short to medium, sweet and sticky. Jammy fruit (apple cider, clementines, blueberry syrup), more brown sugar, polished oak, woody spice, caramel, and vanilla. Long and sweet with hints of spice.
