Nose
Highly elegant sherry notes, polished furniture, juicy plums and toffee. Sultanas and red berries with dried apricots and soft vanilla/fruit cake. Pleasant acidity, light floral touches, and subtle wood spices. Sherry laced chocolate sponge cake, pastry, barley water, rum and raisin, and butterscotch with faint dried apricot. Water releases golden syrup and spice.
Palate
Gentle but spicy with delicious oak and plenty of fruity notes like oranges, blackberries, and gooseberry tartlets. Fruit tea, cinnamon, nutmeg, and a little aniseed. Big sherry influence, barley water, raisin, resinous oak and brazil nut with cinnamon, black pepper and nutmeg spice.
Finish
Long, oaky but not tannic, with mint and echoes of fruits. Chocolate, raisin, fudge and tobacco leaf with lingering salty, spicy sherry.
