Nose
Brine, prosciutto, apricot, Chinese 5 spice. Initial nose is that peat and meat combination that slowly gets stronger and ends with anise/cinnamon/cassia bud/allspice blend.
Palate
Butterscotch, currant, oaked cider, pear, caramel, lime. Fruit comes out more, with less spice, more vanilla, and caramel elements.
Finish
Bacon, chocolate truffle, sea air, Soprassata, dry apple, caramel. Brings back salt, peat evolved meat, and chocolate notes.
