Salty, maritime notes, smoked mussels, clear maritime brine and beachy minerals, eel and oily Saba crisping over hot charcoal, dusty earth, dried grass, twist of citrus, parsley, sweet soy sauce.
Palate
Medium-bodied, acrid and peppery, dirty grill grates, charcoal ash, maritime with dusty earth and soot, grilled lemons and citrus, occasionally medicinal (lemons and herbs turned into cough drops), Cantaloupe melon, dark chocolate, hops, iodine.
Finish
Medium-length, charred lemonade, ash, oily fish skin, dry burnt embers, ash, lemon pith, quite creamy.
