Nose
Toasted, sugared pecans and honey-roasted cashews, with a side of churros. Sweet tobacco and peat mingle with fruity red wine notes. Cinder toffee, praline, and distant bonfires. A touch of leather, dark red berries, sweet peat with charred pork, dried orange peel, and plum sauce.
Palate
Rich, lush and intense. Treacle toffee and burnt Demerara sugars against a backdrop of sweet peat and toasted marzipan; a phenolic crème brûlée drizzled with sweet balsamic glaze. Dark caramel, Christmas pudding, characteristic Caol Ila peat, spiced, poached figs, pepper, salt, and a touch of tar.
Finish
Long. The smoke gets drier and there's more salt. Some oak pops out with time. Baking spices linger, along with smouldering embers.
