Nose
Warming wood smoke with gentle farmy notes, quinces, vanilla biscuits and lemons, a touch of olive brine, sea breeze, licorice root, nutmeg, and a whiff of oysters. Also, lighter lemony notes combined with a heavy engine grease nose, machine-like smokiness, coastal scents, marram grass, and sandy beaches. [5, 12, 13]
Palate
Damp oak, pralines and cinnamon with a smoky bonfire, an oily mouthfeel, somewhat ashy, brine and iodine, sweet barley husks, and lemons. Also, sawdust and oak shavings, bonfires on the beach, old engines, and a slightly creamy smoke. [5, 12, 13]
Finish
Long, with oak spices, kippers, minerals, lingering wood smoke, and a very salty character. Also, a very smoky finish with a sooty, slightly greasy and sticky quality. [5, 12, 13]
