Nose
Ash, earth, grass, anise, lemon, ginger, vanilla, and BBQ pork notes. It also presents with porridge oats, pine needles, warm tar, and a splash of sea water, evolving into grassy peatiness with red berry sweetness, fresh coastal notes, green leaves, and soft peat smoke. Some describe smoked pears, saltwater taffy, liquorice, hot cider, caramel, and chai tea, with medicinal notes like camphor and wet gaze.
Palate
Darker and weightier, with smoke, marshmallow, almond, liquorice, mint, tar, and lemon cough drops. Intense burning peat and cast iron stoves, with freshly unwrapped bandages, melted bittersweet dark chocolate, white pepper, and cinnamon heat. Water can reveal mineral notes, sugary sweetness, sugar cookies, and sponge cake. Other notes include cinnamon, pear, white raspberry, honey graham crackers, and candied ginger.
Finish
Ash, vanilla, malt, brine, mint, and grapefruit. It can be mineral-heavy with gravel and seaside rockpools, transitioning to rich sweetness, dark chocolate, and fresh minty notes. Described as medium-long, becoming progressively drier, with wood smoke evolving into soot and cold ashes, yet retaining a fruity character with assorted spices.
