Nose
Fresh citrus fruits, lemon and lime, apple, minerals, and a waxy quality with some honey. Crisp and clean with orchard fruit like apple skin and underripe pear, subtle honey and lemon peel. Pure chalk and slate entwined with paraffin oil, candlewax, and green apple juice, with a hint of vanilla.
Palate
Fairly dry with subtle peat smoke, chalky and waxy with honey-glazed apple and citrus. Lightly oily with a wax-polish quality, Granny Smith apple, white pepper, mineral notes, and lemon zest. Balanced with soft salinity and a dry, clean core reminiscent of coastal northern Highland malts. Powerful and cutting, with chalk, wax, and lemon flavors.
Finish
Smoky and ashy with salty and waxy notes and ripe apples. Moderate length with light citrus oils, a touch of wax, and muted spice, leaving a clean, fresh impression. Long and pristine, with citrus fruits and aniseed touches, a mineral and slightly saline aftertaste, and a light lemon fizz.
