Description

Signatory was founded by Andrew Symington in 1999. After discovering single cask single malt whisky while managing Prestonfield House Hotel Andrew bought his first cask, a Glenlivet 1968, and is now one of the largest independent bottlers in Scotland. Searing heat, pickled ginger, chicken broth, mushrooms, fragrant papaya, white tea, pain au chocolate, deep old-whisky earthy funk. With water, more grassiness and mint.
Palate
Bright fruit notes of nectarine, pineapple, lime, honey, fresh ginger, white tea deepening to black tea, spiced oak, macadamias, nutmeg, black pepper. With water, honey into the tea and chocolate babka.
Finish
Fresh and sweet, black tea turns back into white tea, fragrant flowers, coconut, lime, honey. With water, buttery pastry and richer green fruit.
