Dà Mhìle (pronounced da vee lay) is Gaelic for 2000. As an organic farmer I commissioned the revered Springbank distillery to distil a special organic malt whisky in 1992. It was specially hand crafted to celebrate the Millennium. My vision was to create a truly organic whisky, not just because it is the only realistic way forward. It protects the soil, the water, the wildlife and the people who work the land. This blended whisky contains 50% of the original 1992 Dà Mhìle organic malt whisky, and 50% of a fine organic grain whisky distilled at Loch Lomond. The whisky has been blended without chill filtration and no caramel added for colour uniformity. Dà Mhìle is a completely natural product.
