Description

A farm distillery owned and run by the Cuthbert family. It is only operational during the farm's quiet periods in mid-summer and mid-winter, sometimes producing as few as 100 casks per year. It has been operational since 2005, releasing its first whisky in 2018.

The initial aroma is estery, with a subtle hint of acetone, followed by notes of cold butter and apricot jam on fresh baguette. It evolves into florals like freesia, nemesia, candied rose petal, and elderflower blossom, with underlying vanilla ice cream and lemon zest. With water, it becomes fragrant sunshine, jasmine, pineapple, lemon leaf, pine needles, daffodil, camomile, and mixed herbs (rosemary/oregano).
Palate
A soft, silky start with a chewy mid-palate, accompanied by light pricks of fresh ginger and a sweet floral lift. It is precise and balanced, with soft marshmallow, pink fruits, and heady, herby, floral elements. Gentle yet present, best enjoyed with water.
Finish
A zingy acidity leads to a gentle fade.
