Description

Daftmill Farmhouse was granted a license in 2003 allowing its first distillation to take place in December 2005. As an independent distiller, owner Francis Cuthbert's main aim was to produce a light Lowland whisky, but - as the site is still an active farm - the distillery has a silent season in spring and autumn whilst work happens in the fields. All the barley needed is grown on Daftmill Farm.

Asia, specifically the Japanese market
Nose
A deep vanilla aroma reminiscent of crème brulee appear immediately, with some tinned peaches, dried cocoa powder and a delicate grassy note building. Light and fragrant with touches of honey, lemon curd, some pineapple and a few floral notes as well. Followed by sweet pastries and freshly cut grass. Delicate and elegant.
Palate
Fresh fruit explodes on the palate with green apples, pears and some melon, developing into soft peach and a slight tropical note, there's also a pleasant herbaceous almost earthy note on the mid palate. A lovely creamy mouthfeel with notes of vanilla, but also chalky with touches of green bananas and processed sugar. A hint of white pepper and pickled ginger too.
Finish
The oak appears again on the finish, offering vanilla pods, clove, cinnamon and some melted honey. Lingering spices, lemon pith and meringues. Medium to long, with a light waxy and grassy note.
