Description

Daftmill Farmhouse was granted a license in 2003 allowing its first distillation to take place in December 2005. As an independent distiller, owner Francis Cuthbert's main aim was to produce a light Lowland whisky, but - as the site is still an active farm - the distillery has a silent season in spring and autumn whilst work happens in the fields. All the barley needed is grown on Daftmill Farm. This exceptional single cask release is the result of traditional, field-to-bottle craftsmanship using barley grown exclusively on the estate. Matured in a first-fill Oloroso sherry cask, the whisky offers a sophisticated profile that balances the distillery's signature light, elegant spirit with deep, rich sherry influence. This limited expression captures the seasonal character of a farm-based distillery, delivering a complex and authentic taste experience born from the heart of Scotland.

Nose
nutty, chocolatey, and funky with thick malt and a wet gravel minerality; dry nutty sherry tones, firm old leather, and earthy dunnage warehouse notes; aged Gouda and Comte; candied and dried dark fruits: raisins, dates, and figs; a random handful of Dad's Jelly Bellies.
Palate
big, thick, and chocolatey, with loads of dark fruit and a cheesy-farmy funk; chewy-grassy malt with more of that wet pebble gravel minerality; still nutty, with well cared for old leather, spicy Nicaraguan tobacco, and an earthy dunnage note; the cheesy-lactic notes offer more aged Gouda, nutty Comte, and Manchego; more candied and dried dark fruits; grilled blue cheese stuffed figs wrapped in Pancetta; with time some lovely citrus fruits emerge from the more dominant sherry and malt.
Finish
long, rich, and spicy; more dried dark fruits, spicy tobacco, barley, and lactic-farmy tones.
