Description

Daftmill Farmhouse was granted a license in 2003, with its first distillation taking place in December 2005. As an independent distiller, owner Francis Cuthbert's main aim was to produce a light Lowland whisky. The distillery operates seasonally, with silent periods in spring and autumn for farm work. All barley used is grown on Daftmill Farm. This 2009 Single Cask #29 UK Exclusive was distilled in 2009 and matured in a first-fill Oloroso sherry butt for 11 years before being bottled in 2020 at 61.1% ABV. Only 629 bottles were released exclusively for the UK market.

Nose
Rich and fragrant with aromas of dried fruits, citrus peel, honey, vanilla, and malted barley wrapped in gentle oak. Deep and rich layers of leaf mulch, cellar earth, robust tobacco and cedar wood notes, unlit cigars, sultana and pine resin.
Palate
Full and expressive, revealing flavours of sultanas, apple, pear, sweet malt, and toffee, balanced by sherry spice and herbal notes. Ginger, toasted cinnamon and black pepper, tempered by sherried peels and honeyed cereal. Dark fruits, rich meaty, gamey notes, fruit gravy and slightly salted liquorice.
Finish
Long and warming, with lingering dried fruit sweetness, malt, and oak spice. Final hints of good quality dark chocolate and rum-soaked raisin. Long, salty, earthy and rich with old oloroso and walnutty notes.
