Description

Daftmill is a farm distillery in the Lowlands of Scotland, owned and operated by the Cuthbert family. It operates only during the farm's quieter midsummer and winter seasons, producing a limited number of casks per year. All the barley, specifically the Publican variety, is grown on the Daftmill Farm estate. This particular release is a 2011 vintage, single cask bottling (Cask No. 55) matured in a first-fill ex-Bourbon barrel from Clermont Springs. It was bottled in January 2024 exclusively for New Zealand, with an outturn of 209 bottles at a strength of 60.2% ABV.

Nose
Rich and expressive, with yellow and green fruits, fresh gassy notes, olive oil, lemon barley water, subtle waxiness, flower honey, fruity muesli, and crystallised fruits.
Palate
Sweet and rich, with greater concentration. Many cooking oils, citrus marmalades, fruit salad juices (verging on tropical with hints of pineapple and papaya), peppery and waxy warmth, fruit teas, and subtle cider apple funk. Water brings out core fruitiness and thickens texture.
Finish
Long, surprisingly spicy, with pineapple, juniper, sweetened olive oil, and lemon balm.
