Nose
Fruity and mineralic to begin with; honeydew melons, wet pebbles, a hint of kiwi and waxy lemons. Light and fresh generally.
Palate
Medium bodied, just a hint of a resinous waxiness, then a spice that has a bit of a rye-feel to it, that sort of rye spice, but also a fizzy effervescence and slight overripe fruity sweetness. Tepache (the fermented pineapple drink), pineapple boiled sweets, more herbaceousness, fennel and coriander this time. There's a slightly soapy element somewhat reminiscent of something like Loch Lomond (think Inchmurrin) but with a definite spice to it which I'm guessing is some oak spice from the octave.
Finish
Spicy and tingly - fizzy ginger beer and pineapple sour sweets, drying black tea, maybe even a little bit kombucha-esque.
