This is a single malt whisky from Dornoch Distillery, distilled in 2018 and bottled in 2023 at 4 years old from a First Fill Bourbon Octave cask. Only 89 bottles were produced. Dornoch Distillery, founded in 2016 by Simon and Philip Thompson, operates in a 19th-century fire station, producing around 20,000 litres of alcohol annually. They use organic heritage barley and slow fermentation in open-topped wooden washbacks, focusing on traditional methods and experimental exploration to create complex and distinctive flavours.
