Nose
Dried plums and ume, elevated dried fruits and berries, candy store (caramels, chocolate covered nougat, creams, fruit pastes, nuts), leathery funk, winey raisins, hints of balsamic. Malted chocolate, toasted oats, passionfruit (with water), toffee, hints of blue cheese, ricotta, honeycomb.
Palate
Syrupy dried fruits (plums, dates, raisins), peppery spirit, nutty (candied almonds, peanut brittle), leathery funky, savory and sweet, shiso leaf, sweet balsamic glazes, shoyu, touch of citrusy ponzu. Full-bodied, lots of pepper, floral notes, more cheesiness, chili flakes, fresh cream (with water), spice cake, pencil shavings.
Finish
Medium to long, slightly peppery, dried fruits, kiss of salt. Medium-long, oak chips, moss, chocolate Necco wafers, cloves, malted milk powder.
