Nose
Delicate and floral with astonishing sweetness, notes of ancient rum, cedar wood, incense, rancio, and caramelised fig jam. Hints of peppermint, kumquat, quince paste, orange cake, and biscuity malt. Further aromas of peaches and cream, mulled fruits, Christmas cake, and new leather, with subtle smoky undertones and zesty citrus.
Palate
Utterly profound, starting sweetish then savoury with a trace of salt. A slow wave of quince paste and biscuity malt, with a whisper of peat. Oak notes emerge, leading to rum-like sugars and sweet cedary oak. Soft and delicate, with smoky nuances, peaches and cream, and warming, buttery fruit. Richer notes of brown sugar, cinnamon, cardamom, clove, ginger, leather, and tobacco. Layers of citrus, soft oils, nutty tones, and vanilla.
Finish
Super fine and prolonged, with stewed orchard fruits. Long and warming, offering sweet, subtle spice and nutty oak, leaving the palate moist and coated with soft oils. Gently drying, with notes of candied oranges, green tea, aniseed, yellow plums, and rounded, polished oak.
