Description

Opening in late 2017, GlenWyvis was started with the intention of rejuvenating rural Dingwall by introducing a community-run 'craft' distillery. This is the Members Release from the Glenwyvis distillery, bottled on 12th October 2021. It was distilled in 2018 and matured in a combination of 80% first-fill ex-Tennessee whiskey barrels, 15% first-fill ex-Moscatel casks, and 5% refill whisky hogsheads. This release was reserved for shareholders of the distillery.

Initially yeasty/malty, with strong vegetal notes, nectarines, plums, Vegemite, smoky charred notes, tobacco, lemon bon bons, sweet and salty popcorn, whipped cream, subtle floral notes, white-pepper spiced pear-and-peach salad, Moscatel sweetness, ripe honeydew melon, and Braeburn apples.
Palate
Stone fruits, candied lemon jelly sweets, chilli spice, sweetness, yeasty/new make/malty notes, buttery malt, crumbly fudge, vanilla pod, green apple peel, and peppercorn.
Finish
Lingering vanilla, ripe orchard fruit, heavy oak char, rich silky caramel, bitter cacao, and chilli spice.
