Description

Gouden Carolus Single Malt Sherry Oak is an exceptional taste expression from the Molenberg Distillery. It is distilled from the mash of Gouden Carolus Tripel beer. After an initial maturation, this whisky was enriched with a selection of Oloroso sherry barrels, made from 100% American oak. The result is an intense, fruity whisky with hints of ripe fruit, vanilla and dark chocolate.

Nose: Refreshing aroma with warm raspberry coulis, plums, strawberry gelato, dark chocolate, red apples, apple sauce, honey, vanilla custard, chai, and Belgian waffles.
Palate: Explosion of flavors with warm spice, red fruit, soft, velvety, buttery mouthfeel, chai, pepper, clove, ginger, plums, strawberry and raspberry ice cream, grapefruit, red grapes, raisins, chocolate cream, vanilla, and grape.
Finish: Quite rich and lovely smooth texture, easy and soft, with apple sauce, strawberry gelato, smooth, velvety, silken touch, light, short to medium-length, ripe fruit and spices.

This reads as a fruit-led, generous single malt, with warm raspberry, plum and strawberry meeting chocolate and custard-like vanilla. The palate’s spice gives that ripe fruit some definition, while grapefruit offers a brighter counterpoint. For a preference toward freshness, the overall emphasis seems more soft and rich than crisp; the lighter citrus note is welcome, though. The short-to-medium finish sounds like a modest limit on an otherwise clearly described character.
