Nose
Precise, delicate. Floral (lily, iris), vanilla, herbaceous (alfalfa, hay), smoky, root-like (ginger) and empyreumatic (pellets, ashes), the first nose is also fruity (William pear) and licorice-like.
Palate
Clear, slender. Behind a gorgeous mineral reduction (schist, slate), the attack gives its own take on the animal character of the nose (bresaola, Grisons beef). The herbal mid-palate (nettle, peppermint) becomes lemony and milky (coconut, vanilla flan). The very end of the palate is infused (sage, lemongrass).
Finish
Long, distinguished. The earthy start of the finish (dried peat) brings to mind the harvest period (cut barley). In the after-taste, the same blocks of rich, oily and salty peat mix with the sweet wispy smoke of a Havana cigar.
