Description

Duncan Taylor & Company presides over the ownership of one of the largest privately-held collections of Scotch whisky casks. Though the company's origins lie in Glasgow as a whisky merchant and broker, its headquarters are in the North East of Scotland - close to Speyside - and it has complete control of the entire production process. The Octave range involves finishing whisky in smaller, reconstructed ex-sherrywood octave casks for a period of time, typically around 3 months, to increase wood interaction and impart more character.

Nose
Toffee, red berry, oatcake and a hint of smoked ham. Salty sea weed, honey, orange blossom, white pepper. Waffles drizzled with honey, soft peat smoke, and a coastal note.
Palate
Buttery on the palate, with savoury notes coming to the fore. A light sweetness of custard tart and nutmeg lingers in the background. Heather honey, milk chocolate, nutmeg, soft sherry and orange blossom. Gentle sherry, honey roast ham, tangerines, smoked meat, candied apples.
Finish
A hearty waft of familiar heather-y smoke appears right on the end. Persistent with the sweetness of Sherry combined with cocoa powder and fruit. Long and glorious with heather and gentle smoke.
