Hillwood is a single malt, single cask, small-batch Australian whisky from Tamar Valley Distillery, located in Hillwood, Tasmania. The distillery, run by the Herron family, creates everything from scratch, from milling and mashing to fermenting, distilling, maturing, and bottling on their Hillwood property. The whisky is made using water tapped from a natural Permian age glacial spring. It is a contemporary Australian whisky, made in the tradition of Scottish single malt, with a distinctive edge from the Tasmanian landscape.
