This third release from Edinburgh's Holyrood distillery was produced from an experimental mash, utilising a variety of malts. It was matured in bourbon and oloroso casks. Holyrood Distillery, founded in 2019, is located in Edinburgh and aims to create spirits that reflect the city's rich brewing heritage.
