Description

This is the second single cask release from the Holyrood distillery. The single malt was distilled from a combo of Distilling Malt, Distillers Yeast 502, Distillers Yeast 379, Nottingham Ale Yeast, and Belgian Ale Yeast, and matured in a single American Oloroso hogshead. Holyrood Distillery, founded in 2019 by David Robertson along with Rob and Kelly Carpenter, is the first whisky distillery to open in Edinburgh in almost 100 years. The distillery aims to create outstanding spirits that reflect the city of Edinburgh and takes inspiration from its surroundings and rich brewing heritage.
