Description

The Holyrood Noir Premier Cru Yeast is an innovative single malt Scotch whisky from the Lowlands region, part of the 'Noir trilogy' from the Holyrood Distillery in Edinburgh. This expression highlights the distillery's experimental approach, focusing on the influence of a special Premier Cru wine yeast, known from high-quality French wines, on the whisky's aroma profile. It is matured in a combination of ex-bourbon barrels, Chardonnay casks, and other white wine casks. The result is a modern, aromatically dense single malt reminiscent of a fine French patisserie, with notes of tarte tatin, toffee, butter caramel, and ripe pear. It is bottled at 47.2% ABV and is non-chill filtered.
