Description

From its Mizunara wash backs and small stills with steep lyne arms to the fact that the mashman uses a wooden paddle to stir the mash, Chichibu is a hands-on distillery with quality as an intrinsic focus. With the ground now broken on a blending room, and an off-site cooperage, Ichiro Akuto's distillery - formed from the ashes of his grandfather's Hanyu distillery - is one of the finest producers. This Chichibu 2016 Single Cask #14200 Alberta Edition #1 is an Alberta-exclusive single cask, distilled in 2016 and aged in a Sherry Hogshead cask, bottled in June 2025 at cask strength. It is a highly collectible and extraordinarily limited release.

Nose
Opulent aromas of dates and carobs, coated with black cherry jam notes, cooked plum and baked cherry pie. Initially after adding water, it gets rather malty with some cream-frosting notes. After airing, quite a bit of floral notes and honey shine through, and the fermentation and burning notes went down significantly. The red berries are very pronounced. Some oaky notes for sure, some vanilla, and some green apples. There is definitely strong creamy notes to it. The sweet and crisp green apple note is really nice, well complemented by the grassy and floral notes.
Palate
More gorgeous ripe black cherries continue on the palate, complemented by baked fruits, luxurious flavours with great balance of power and fruit. With water, very gentle, and medium coating. Sweet arrival – quickly turns to oaky sweetness and floral, a while turns into green apple and sour candy, some honey and cream is there as well, chocolate bitterness & pepper emerges after that, a nice sweet and elegant oriental scented oak lingers in the background at all time.
Finish
The lavish ripe flavours continue on and on, mingled with beautiful balanced fruit to calm the power on the finish. Quite long and very mellow and gentle, woody, candy, grassy, vanilla. No off-notes at all, the vanilla & woody candies linger for quite a long time even diluted by water.
