Nose
Creamy Vanilla and trademark Islay Smoke with a medicinal hit of Bandaids and Germolene Antiseptic Cream. Also Barley Sugar, Lemon, Pepper, Brine and Seaweed. Shellfish, seawater, yeasty sourdough, white flowers, lemon juice, fish sauce, wood ashes, and a touch of good malt vinegar on salty chips. With water, more ashes, beach pebbles, sheep wool, blue cheese and bandages.
Palate
Salty, Smokey, Creamy and Malty with Peppery Spice. A soft, peaty oil slick with lots of ash, brine, green olives, sea water, medical embrocations, black pepper, hot grist and lime juice on fresh oysters.
Finish
Long and all on kiln smoke, anchovies, pine resins, cured meats, salted fish and newspaper ash.
