Description
The Isle of Harris distillery, established in 2015, released "The Hearach" as its first single malt whisky, named after the Gaelic term for a native of Harris. This release is a tribute to the island and its people, with every step of production, from distillation to bottling, carried out on the island by local staff. The whisky is made using soft Outer Hebridean water and 100% Scottish Concerto barley, lightly peated to 12-15 ppm using hand-cut peat from Cleite Mhòr. It undergoes a long fermentation process, lasting up to five days, and is matured for at least five years in a combination of first-fill ex-bourbon casks (from Heaven Hill and Buffalo Trace) and Oloroso and Fino sherry butts (from José Miguel Martín). Bottled at 46% ABV, it is non-chill filtered and has natural color. Each batch, including Batch #6, has subtle variations due to individual cask choices and marrying periods, with Batch #6 having an outturn of 12,026 bottles and bottled in 2023.
