Description

Kaiyo The Peated Mizunara Oak is a Japanese blended malt whisky matured in Mizunara oak casks, known for their rarity and unique flavor profile. This peated expression is made from imported Scottish peated malt and undergoes a unique 'ocean maturation' process, spending up to three months aging at sea in barrels, which is believed to enhance its depth and balance. It is non-chill filtered and bottled at 46% ABV. The whisky is initially aged for 2 years in Madeira casks before being transferred to new Mizunara oak barrels.

Nose
Aromas of pear, apples, fruits, and vanilla, balanced with a not-overwhelming peat. Notes of orange, jasmine, cedar, salty coastal air, roasted pecans, and tangy citrus peels are also present.
Palate
Opens with spicy vanilla oak, quickly moving to oranges and pear. It's smooth and delicate, with a kick of heat. Earthy coffee, green apples, black tea, fresh herbs, cinnamon, and almond pastry notes are evident. The mouthfeel is medium thickness, salty and savory, with barbecue campfire and a medium level of peat. Hints of lemon, raisin, fig, prune juice, and baking spices are also found.
Finish
Medium to long, well-rounded, and dry, with mild peat lingering. Oakiness, warm wine, sweet cinnamon, ripe orange, and biscuits are present, sometimes with a lingering tropical fruit note.
