Nose
Fairly pungent ethanol nose since this is bottled at cask strength which is pretty high at around 62%ABV. Notes of incense, coconut, and vanilla are present but become more pronounced with a bit of water. After diluting the whisky down to around 50%ABV it became a much more palatable dram and really started to shine. Notes of frankincense, pine resin, olive oil, clementine, fresh oak, black pepper, and stewed strawberries present themselves after dilution.
Palate
Very barley driven with a sweet cereal backbone. Robust with notes of roasted chestnut, vanilla, warming oak, caramelised sugar, and honey drizzled pancakes which develop into flavours of stewed fruits: strawberries, apples and pears. Some very delicate umami notes are present, reminiscent of green olives and miso soup.
Finish
Long, quite drying with lingering flavours of vanilla, black pepper and spicy rye bread.
