The ripe apple is clearly drawn, but pie-like sweetness, stewed ginger and rancio pull this toward a deeper, settled style than the bright freshness I usually favour. The fruit keeps it appealing.

The ripe Honeycrisp apple and apple-pie notes give this a clear fruit center, with cherry jam and confit plums adding darker, softer fruit around it. Ginger and rancio bring a more savory edge, while the dark-chocolate bitterness on the palate keeps the sweetness from reading as uncomplicated. The long finish, with baked apple and gentle malt fading into rancio, sounds especially coherent. A composed, fruit-forward style with enough contrast to hold my interest.
