Description

The Kilchoman 100% Islay The 2nd Edition is a single malt Scotch whisky released in 2012. It is part of Kilchoman's '100% Islay' series, where all aspects of production, from barley growing to bottling, occur on Islay at the Kilchoman distillery. This limited edition release is a vatting of 3 and 4-year-old spirit, matured in a combination of fresh and refill ex-Bourbon barrels, specifically Buffalo Trace Bourbon barrels. It is bottled at 50% ABV, non-chill filtered, and has natural color. The barley used is grown on the Kilchoman Farm and is lightly peated to approximately 20-25 ppm.

Fruity with citrus (lemon, grapefruit), yellow fruits (apples, peach, cantaloupe), vanilla, honey, nuts, some new make notes, light smoke/peat (vegetal peat, ashy peat), oak, black licorice, coarse vanilla bean, wet limestone, slightly sour, beery malt, butterscotch, rubbed tobacco leaf.

Oily mouthfeel, sweet light fruits (apples, peach, cantaloupe, grapefruit), vanilla, honey, sweet cream, tart citrus, candied orange & lemon peel, honeyed malt, ashy peat smoke, unsweetened chocolate, charred wood, greenish herbal quality, black pepper, cardamom, raw ginger, sugary barley, sweet peat, hints of smoke.
Finish
Medium to long, dry-smoky, slightly bitter, peat returns (less vegetal, more bitter, grassy), toffee, maple, canned peach syrup, liquid smoke, citric with white pepper, honey, barrel char, ashy peat smoke, smoky hay, pepper, salty liquorice, singed grass, sea salt, ginger root, cinnamon sticks, lime zest, earthy malt.
